From Grain to Bottle, All Under One Roof

Charleston Distilling Co. is a true working distillery. Inside our 10,000-square-foot facility on Meeks Farm Road, we control every step of how a spirit is made — milling, mashing, fermenting, distilling, and bottling — without outsourcing the parts that matter. What goes into the bottle is ours, start to finish.

It Starts With the Grain

Great spirits begin with great ingredients, and ours come from close to home. We source our grain from Weathers Farm in St. George, South Carolina, just up the road from us. Working with a local farm means we know exactly where our grain comes from and can build our recipes around the character of Lowcountry-grown crops. That regional fingerprint carries all the way through to the glass.

Mashing and Fermentation

Once the grain arrives, we mill and mash it on-site to release the sugars our yeast will turn into alcohol. From there, every batch ferments in a closed, temperature-controlled environment. Holding fermentation steady — rather than leaving it to the swings of a hot Carolina afternoon — gives us clean, consistent results batch after batch.

Depending on the spirit we’re making, fermentation runs between two and four days. Lighter, clearer styles move faster, while richer spirits are given the additional time they need to develop their full range of flavor before they ever reach the still.

Distillation

Distillation is where the craft really shows. We run our wash through a 30-foot stripping column to concentrate and clean up the spirit, then refine it further on a 50-foot column still, where we make the careful cuts that separate a smooth, balanced spirit from the rest. Running tall columns gives us the control and precision to dial in exactly the profile we’re after for each product.

Aging in Our Warehouse

Some spirits are best fresh; others are made by time. Our on-site warehouse holds barrels of bourbon, rye, rum, and agave spirit, quietly maturing as the wood and the Lowcountry climate do their slow work. Every barrel deepens in color and complexity until it’s ready, developing the layered character you can only get from patient aging.

A Cleaner Pour

For our vodka, smoothness is everything. We filter it through coconut-shell carbon, a natural filtration that strips away harshness and leaves behind a clean, crisp spirit ready to sip neat or build into a cocktail.
